Dr. Ruchi Vaidya is a distinguished food and nutrition scientist with over 15 years of experience dedicated to promoting healthier lifestyles through enhanced dietary habits. Currently serving as an Associate Professor, Research and Development Cell, Parul University, Vadodara where she is involved in integrated and translational research for Public Health and Clinical Nutrition. Besides, she serves as a Trustee at EcDEESHA Foundation, where she spearheads the Adolescent Health and Nutrition Initiative (AHANI). In this role, she empowers schoolchildren with critical knowledge about health, nutrition, and essential life skills, having successfully collaborated with numerous schools across Gujarat. Her leadership extends to initiatives aimed at strengthening nutrition education, empowering healthcare professionals, and developing community-based strategies for chronic disease prevention. Dr. Vaidya’s research in metabolomic nutrition, particularly concerning the role of gut microbiota in prediabetes prevention, garnered her the prestigious Young Scientist Award, a recognition that fuels her ongoing commitment to the field. She has also directed a community-based human clinical trial focused on advancing diabetes prevention and management in underserved communities, a project supported by a Young Scientist Grant from the Almond Board of California. Dr. Vaidya holds a PhD in Nutrition.
